Nick made some.
I'm a big fan of sweet chillli sauce with sour cream on chips and wedges and the like and I'm quite happy with the bottle of trident or masterfoods or whatever they have at the coffee club.
So we were having Laksa for dinner last night, Nick makes this absolutely suburb mild laksa I LOVE IT. I'm unpacking groceries (he shops I put away) and he says oh yeah put that over by the stove to Rice Wine vinegar (we have some in the cupboard but he can't open it so it's been there for over a year) 3 or 4 red chillis garlic ginger brocholi and caspicum and baby carrots.
I said what are you going to do to my laksa?! He said I bet you're wondering what the chilli and garlic etc is for - well I'm not going to do anything to the laksa - except put vegetables in it (broccholi, carrot, snow peas and green capsicum) those other things are actually for Sweet Chilli Sauce.
And he starts making it -
3 cloves garlic,
1-2tblsp ginger,
4 chillis,
250ml-300ml rice wine vinegar
250g sugar
on the simmer for 10 minutes.
Then he oven sterilises some old baby food jars and puts his absolutely perfect homemade sweet chilli sauce into the jars and into the fridge.
So tonight we're having chips, sour cream and home made sweet chilli sauce for dinner.
